The new blocks take a full-length single piece up a decent goods lift, which is worth designing for rather than defaulting to a jointed run.
Original brickwork is uneven by ten millimetres or more across a bay, so the back edge is scribed to the actual face rather than to a line. Where brickwork bows enough that a full-depth piece cannot go back tight, the units move forward and the front overhang changes. What is under the old top is the real question.
The mix here is former industrial and warehouse conversion, 2016 onwards apartment tower and interwar terrace. They are not interchangeable, and a worktop finds the differences quickly.

What has to be finished before you can template?

Book the goods lift and loading bay for the day, clear a straight route through the open plan, and have a plumber on hand for the island services coming up through the floor. Access in a tenanted flat depends on the tenant, so the template and fitting dates are agreed with whoever actually holds the keys. A plumber disconnects before we arrive and reconnects after we leave, and that is worth booking early. Sound carcasses are the condition.
