The newer self-build replacement houses at the top of the hill go the other way, with proper full-height cabinetry and a large island.

Where the roof has been converted there is usually a steel over the kitchen that went in after the walls, and the run beneath it is worth checking for square. Most of these have a side passage and a back door, so a full-length piece can usually reach the kitchen without being cut down, and the piece sizing is driven by the slab rather than the route. Settled on the drawing, cut once.
